Carrot cake

  • 2 cups flour
  • 2 tsp. Soda
  • 2 tsp. Cinnamon
  • 1 1/2 cup oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups grated carrots

Sift together flour, soda and cinnamon and set aside.

Mix oil and sugar together well. Add eggs and carrots. Add sifted ingredients and mix altogether. Bake at 350 degrees for 45 to 50 minutes.

Ice with cream cheese icing (see cream cheese icing recipe).
