Coconut Cream Pie

  • 1/2 cup flour
  • 1 cup sugar
  • 1/4 cup melted butter or margarine
  • 4 eggs, well beaten
  • 2 cups milk
  • 1 tsp. vanilla
  • 1 7 oz package shredded coconut
  • 1 baked pie crust

In mixing bowl, combine flour and sugar. Add butter, eggs, milk, and vanilla, mixing well. Stir in coconut. Pour into a baked pie crust. Bake at 350 degrees for 45 minutes. Cool. Top with meringue with sprinkled coconut over top. (See meringue recipe).
