Bean and Rice Burritos

  • 1 can black beans
  • 1/2 can canned corn
  • 1 cup cooked rice
  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 Tbsp butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • juice of 1/2 lime
  • 1-1/2 cup mexican blend shredded cheese
  • 8 medium flour tortillas

Set tortillas and cheese aside. After draining beans and corn, combine everything else in a large skillet. Saute for approx 5 minutes. Spoon mixture onto flour tortillas and top with cheese. Preheat grill to medium.

Roll and fold, then secure with toothpicks. Place on grill to crisp each side.
