Sand Tarts

  • 2 # brown sugar
  • 1 # butter
  • 1/2 tsp soda
  • 3 eggs
  • 4 cups flour, plus more when rolling - see tips below
  • lil' vanilla

Mix all ingredients well then refrigerate until firm or overnight. Break off more than a handful of dough and work more flour into it. The dough needs to stiffen up quite a bit. Roll out about 1/4in thick and cut with cookie cutters into desired shapes. Beat 2 more eggs and brush on top of cookies. Sprinkle cinnamon or colored sugar. Bake on wax paper on cookie sheets at 375 degrees; check at 11 minutes.

  • cookies should easily come apart from scraps, keep shape while baking, and be able to be placed 1/2in apart in the oven; if not, you didn't add enough additional flour
  • baking on wax paper is easier to clean up because of how sprinkles and toppings bake onto your cookie sheets
  • make them a little thick so the baked cookies are soft
  • unless you are feeding a small army, cutting this recipe in half should be plenty
