Ingredients
- 1 - 8oz package manicotti noodles
- 2 - 27oz jars spaghetti sauce
- 2 - eggs
- 1 - 15oz container ricotta cheese
- 4 - cups shredded mozzarella cheese
- 1 - cup grated parmesan cheese
- 1 - tbsp dried parsley
- pepper
Instructions
- Boil noodles 7 to 9 minutes, drain.
- Preheat oven to 350 degrees.
- In a large bowl, beat eggs, stir in ricotta cheese, 3 cups of mozzarella, and 3/4 cup of parmesan, parsley and a dash of pepper.
- Spread 1 jar of sauce in the bottom of the baking dish.
- Fill each cooked manicotti with ricotta mixture, and place in baking dish.
- Top with second jar of sauce and remaining cheeses.
- Cover with foil, and bake 45 minutes.
- Uncover, and cook until cheese is melted (about 5 min).
