  • 1 onion
  • 1 stick butter
  • 32 oz chicken broth
  • 1 lb Velveeta cheese
  • 1 can corn, drained
  • 2 cans black beans, drained
  • 2 enchilada sauce
  • 2 cans cream of chicken soup
  • 2 cans rotel
  • 1 rotisserie chicken
  1. saute celery, onion, 1 stick butter
  2. add remaining ingredients, simmer
