Apple Pie

  • double pie crust
  • 2-1/4 lbs thinly sliced peeled cooking apples (such as Golden Delicious)
  • lemon juice
  • 3/4 cup sugar
  • 2 tbsp all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • milk
  • course sugar

Peel and slice apples, then place into a large stockpot. Sprinkle a little lemon juice over apples, shake stock pot to mix. In a mixing bowl, blend sugar, flour, cinnamon, and nutmeg. Dump mixture over apples, then shake and stir until well coated.

Preheat oven to 375, placing a cookie sheet with sides at the bottom in case any filling spills when baking. Prepare double pie crust. Add apple mixture as filling, then add top layer. Brush milk over top, then lightly sprinkle with course sugar. Place a strip of foil around top outer edge of crust. Bake for 40 minutes, then remove foil. Bake an additional 20-30 minutes, making sure filling is bubbling in the holes of the top layer.

Cool on a wire rack for approx 2 hours before cutting. Can be covered with foil and kept for 24 hours, or refrigerated for longer.
