Biscuits

  • 3 cups all purpose flour (125g per cup)
  • 4 tsp baking powder
  • 1 Tbsp sugar
  • 1 tsp salt
  • 3/4 tsp cream of tartar
  • 3/4 cup butter OR 1/2 cup butter and 1/4 cup shortening
  • 1-1/4 cups buttermilk or 1 cup milk

Preheat oven to 450. In a large bowl mix together the flour, baking powder, sugar, salt, and cream of tartar. Use a pastry blender to cut in butter/shortening until it is like crumbs. Make a well in the center and add the milk/buttermilk at once, then stir with a fork until just moistened.

Turn dough out onto a lightly floured surface. Flour your hands and gently knead by folding 4 to 6 times. Pat dough gently until it is about 3/4 inch thick. Dip a biscuit cutter into flour before each cut and place on an ungreased baking sheet. Bake for 10 to 12 minutes until golden brown.
