White Chicken Chili

Preparation Time: 8 hours
Serving Size: 6
  • 3 or 4 boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 packet taco seasoning mix
  • 1 small can chopped green chilis
  • 2 cans great northern beans
  • 1 can white corn or homony
  • 1 can chicken broth
  • sour cream (optional)
  • shredded cheese (optional)
  • Put chicken breasts in the crock pot (you can even put them in frozen)
  • dump the beans and corn on top of the chicken
  • mix the cream of chicken soup, taco seasoning, green chilis and chicken broth; dump this on top of the chicken, beans and corn
  • cover and cook on low for 8 to 10 hours
  • take the chicken breasts out, cut into cubes, return to chili and stir
  • top with cheese and sour cream if desired
