Sweet Potatoes, Candied

  • 2-3 lbs sweet potatoes, peeled and quartered
  • 1/2 cup brown sugar
  • 6 Tbsp butter
  • 1/2 cup chopped nuts or mini marshmallows

Peel and quarter sweet potatoes, then preheat oven to 375. Boil in salted water for 10-12 minutes, until slightly softened. Drain water, then place sweet potatoes in casserole dish large enough so they aren't stacked too much. Melt butter, then mix with brown sugar. Pour butter mixture evenly over sweet potatoes, then bake for 30 minutes. Add nuts and bake for 5 more minutes, or add marshmallows and bake for 3 more minutes.
