Blueberry Bread

Serving Size: 1 loaf
  • 2 cups flour
  • 1-1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 6 oz fresh or frozen blueberries
  • 3/4 cups buttermilk
  • 1 tsp vanilla extract
  • 1/4 cup vegetable or canola oil
  • 1 large egg
  • 1 cup sugar

Preheat oven to 350.

In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. In another mixing bowl, whisk together egg, buttermilk, vanilla, oil, and sugar. Combine bowls, then fold in blueberries.

Bake in a greased bread loaf pan for 1 hour.
