Ingredients
Cake
- 1 cup sugar
- 3 eggs
- 2/3 cup pumpkin
- 1/2 tsp. Cinnamon
- 1 tsp. Soda
- 3/4 cup flour
Icing
- 1/2 cup nuts
- 2 Tablespoons butter
- 1 cup 10x sugar
- 1 8 oz cream cheese
- 3/4 teaspoon vanilla
Instructions
Mix all ingredients for cake well. Pour into a jelly roll pan. Bake at 350 degrees for 10-15 minutes. Take cake out of pan and lay flat on towel covered in confectionery sugar. Roll cake up with towel in the center and let cool.
Whip all ingredients for filling together. Spread on unrolled pumpkin roll. Roll back up with filling in the center. Put in the refrigerator until it is firm. Slice and serve.
