Chicken Salad

Serving Size: 6
  • 3 chicken breasts, split
  • 2 chicken bouillon cubes
  • 3 pieces celery, diced
  • 1 onion (1/3 to 1/2 of it diced, plus two 1/2 inch slices for rings)
  • Miracle Whip (approx 1-1/2 cups)
  1. add breasts and cubes to casserole dish
  2. fill casserole dish half w/ water
  3. add salt & pepper, rings from two 1/2 inch slices of an onion
  4. foil cover, bake @ 375 for 1 to 1.5 hours
  5. let cool, then shred chicken into bowl w/ fingers
  6. add celery, 1/3 to 1/2 of diced onion, salt & pepper
  7. add Miracle Whip until mixture is as wet as desired
