Teriyaki Burger

Burger

  • 1.25 to 1.5 lbs ground beef
  • 1/4 cup grated carrots
  • 1/4 cup chopped scallions
  • 1/8 tsp ginger
  • 2 tsp soy sauce
  • 1/2 tsp sriracha sauce
  • 4 slices fresh pineapple
  • lettuce
  • burger buns

Pineapple teriyaki sauce

  • 1/2 tbsp cornstarch
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 1/2 cup pineapple juice, from squeezing fresh pineapple slices
  • 3 Tbsp brown sugar
  • 1/8 tsp ginger
  • 1 garlic clove, minced

Peel carrots and grate. Combine ground beef, carrots, scallions, ginger, soy sauce, and sriracha sauce. Make 4 patties to desired sizes, then press down in the center with your thumb to prevent bulging. Slice fresh pineapple, saving a few slices to squeeze later to get enough juice, then set pineapple slices and burger patties aside.

Combine cornstarch and water in a bowl, allow to dissolve, then set aside. In a saucepan, mix soy sauce, pineapple juice, brown sugar, ginger, and garlic. Slowly bring to a boil and simmer until sauce reduces, 8 to 12 minutes. Add cornstarch and water mixture and simmer until thick, 1 to 2 minutes. Remove from heat and set sauce aside to cool.

Preheat the grill, then grill patties to desired doneness. Grill the pineapple slices 2 to 3 minutes per side over direct medium heat. Serve on toasted buns with lettuce, burger, pineapple, and sauce.
