Shrimp Scampi

  • 1 lb bag shrimp (thaw and peel)
  • 4 Tbsp butter (1/2 stick)
  • 3 cloves garlic (minced)
  • lemon juice
  • dried parsley flakes
  • red pepper flakes

Thaw and peel shrimp. Lay a sheet of foil out about 20 inches long. Place shrimp in one layer in the middle and (optionally) sprinkle lemon juice on top. Melt butter and garlic in the microwave for approx 30 seconds. Pour butter over shrimp, then generously sprinkle parsley. Lightly spread a pinch of red pepper flakes. Place another sheet of foil on top, then carefully fold each side together to create an airtight seal. Grill on high heat, 4 minutes each side. You can poke a few holes after the first flip if the seals made the foil swell up.
