Crunchy peanut butter cookies

  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1/2 tsp salt
  • 1/2 cup of margarine
  • 1 egg
  • 1/2 tsp vanilla
  • 1 tsp baking soda
  • 1 cup flour
  • 1/2 cup crunchy peanut butter

Cream sugars, salt, butter and peanut butter thoroughly in large mixing bowl. Beat egg and extract into creamed mixture until light and fluffy. Sift together flour and soda. Blend into creamed ingredients gradually. Form into 1 in balls and place 2 in apart on ungreased cookie sheets. With floured form, make criss cross design to flatten cookies. Bake at 400 degrees for 6-7 min or until lightly brown around edges.
