Chicken Gnocchi Soup

  • 1/2 onion (diced)
  • 3 to 4 tbsp garlic (minced)
  • 5 stalks celery
  • 7 to 8 quartered carrots
  • 3 tbsp olive oil
  • 4 to 5 cans chicken broth (how much in cups?)
  • 1 qt heavy cream
  • 1 rotissere chicken (cut in pieces)
  • 2 to 3 bags gnocchi (cooked)
  • 3 sprigs fresh thyme
  • 2 to 3 tbsp dry basil
  • 2 to 3 tbsp dry oregano

Saute onion, garlic, celery, and carrots in olive oil. Add chicken broth, heavy cream, and chicken; bring to boil. Add cooked gnocchi. Add thyme, basil, and oregano; return to boil. Season with salt, pepper, and garlic powder.
