Buns

Dough

  • 1 package yeast, or 2 tsp saf instant yeast from freezer
  • 3 - 4 cups all-purpose flour
  • 1 cup water at 120 degrees
  • 1 egg (one for dough mixture, one later for brushing)
  • 3 Tbsp melted butter
  • 3 Tbsp sugar
  • 1-1/4 tsp salt

Baking

  • 1 egg
  • 1 Tbsp milk
  • (optional) sesame seeds

Add yeast, 1/2 cup flour, and water to mixer bowl and whisk. Let stand 5 - 10 minutes.

Whisk 1 egg, melted butter, sugar and salt together, then add to mixer bowl. Using bread hook on low, slowly add about 3 cups of flour. Mix until it cleans the pan and is the right consistency.

Place dough on floured surface and shape into a ball. Lightly coat mixer bowl with PAM or olive oil and place dough ball back in mixer bowl and cover with plastic wrap. Let stand in a warm place until doubled.

Pre-heat oven to 375 degrees and line a cookie sheet with parchment paper. Place dough on floured surface and squeeze out air bubbles. Shape into a quick rectangle and cut evenly for 8 standard buns. Shape into flattened circles about 1/2 inch thick and space evenly on parchment paper. Very lightly dust each bun with flour, then loosely cover entire sheet with plastic wrap. Let stand 1 to 1-1/2 hours.

Whisk 1 egg and milk. Very lightly brush on top of each bun making sure not to break the rise. Bake for 15 to 17 minutes. Wait until they completely cool before cutting with an electric knife.
