Bread/Rolls (Bill)

Preparation Time: 4 hours
Serving Size: 15 rolls

  • 2-1/4 cups water at 115-120 degrees
  • 1 pack instant rapid rise yeast or 4 tsp saf instant yeast from freezer
  • 1 Tbsp morton table salt
  • 3 Tbsp sugar
  • 1/4 cup butter flavored crisco shortening
  • 6+ cups flour

Heat water in microwave until temp is 115 to 120 degrees, then add water and yeast to mixer bowl and whisk. Let stand 5 min, then add sugar and whisk again, let stand another 5 min. Attach bread hook to mixer. Add salt, shortening, and 1 cup of flour to mixer bowl and start on low. Add 1 cup at a time, waiting a minute between each, adding as much flour as it needs to clean the dough from the bowl all the way down to the bottom. Do not remove the dough if it seems sticky to the sides but only when it pretty much stays in the bread hook. Spread some flour on the counter, pull the dough out by hand and continue to knead for a couple minutes, then form a ball. Spray non-stick cooking spray in the mixer bowl and place the dough back in, covering with a wet paper towel.

Wait until the dough at least doubles, about 1.5 hours later. Don't wait too long or the second rise may be less. Place the dough on the counter again and squeeze out all the air bubbles, then knead a few more times. Cut into as many rolls as you want, or loaves. Spray your pan with non-stick cooking spray, form dough by pressing underneath and making the top smooth, and wait another 1.5 to 2 hours as the dough raises again. Bake at 350 degrees for 25-30 minutes, optionally turning the pan around at 15 minutes. When done, pierce the top of each roll once or twice with a fork, then rub butter on top, cover with a paper towel, and place on a rack until cool.
