Ask your administrator if you think this is wrong. ====== Two Potato Home Fries ====== ===== Info ===== ^Given By: | Bill | ^Preparation Time: | 45 min | ^Serving Size: | 6 | ===== Ingredients ===== * 2 Yukon Gold or Russet Potatoes * 2 Sweet Potatoes * 2 Tbsp vegetable oil * 1 tsp grated ginger * 1/2 tsp garlic powder * 1 tsp curry powder * salt and pepper to taste * (optional) chopped cilantro ===== Instructions ===== Peel and cube all potatoes. Blend ginger, garlic powder, and curry powder in a mixing bowl and set aside. Boil potatoes in salted water for 5 to 8 minutes, until only slightly tender. Drain potatoes and pat dry. Heat vegetable oil in a large skillet on medium high heat. Add potatoes and cook, turning, until browned, approx 8 minutes. Stir in spice mixture, add salt and pepper to taste, and turn and cook for 1 minute.
