Honey Glazed Pork Chops with Mashed Sweet Potatoes

Ingredients
Marinade
- 4 bone-in center-cut pork chops
- since we are reducing in a skillet now, try increasing the marinade
- 1/2 cup freshly squeezed juice from oranges
- 1 Tbsp olive oil
- 2 tsp Cajun seasoning
- 1/2 tsp dried Thyme
- 1 tsp Worcestershire sauce
- 3/4 tsp Kosher salt
Marinade (2nd part)
- 2 tsp honey
Sweet Potatoes
- 4 medium-sized sweet potatoes
- 2 Tbsp butter
- salt to taste
Instructions
- Preheat oven to 375.
- Whisk orange juice, olive oil, cajun seasoning, thyme, Worcestershire sauce and 3/4 tsp Kosher salt in a large bowl.
- Place a rack inside a baking sheet with sides lined with foil.
- Poke holes in the sweet potatoes and place in the microwave, but don't turn it on yet.
- Dip and flip each pork chop in the marinade, then place on the rack. KEEP THE MARINADE IN THE BOWL FOR LATER.
- Bake for 15 minutes, then flip. Continue baking the pork chops for 10 minutes, but start the sweet potatoes now…
- Turn on the microwave with the sweet potatoes for 25 minutes, until soft.
- Pull out the baking sheet with pork chops, then preheat the broiler at 500.
- Add the honey to the marinade and whisk again. Brush over one side of the pork chops, then place under the broiler for about 4 minutes (you can raise the rack).
- Flip the pork chops and brush the marinade on the other side, then dump the marinade into a small skillet and turn on med-high. After about 4 more minutes the pork chops should be done.
- Reduce the marinade a bit, but keep it a bit runny, about 4 minutes stirring with a spatula.
- When the sweet potatoes are soft, slice them lengthwise down the middle and scoop the insides into a bowl. Mash with butter and salt to taste.
- Drizzle some of the sauce over the pork chops and/or sweet potatoes before serving.
