Peel and cube all potatoes. Blend ginger, garlic powder, and curry powder in a mixing bowl and set aside. Boil potatoes in salted water for 5 to 8 minutes, until only slightly tender. Drain potatoes and pat dry. Heat vegetable oil in a large skillet on medium high heat. Add potatoes and cook, turning, until browned, approx 8 minutes. Stir in spice mixture, add salt and pepper to taste, and turn and cook for 1 minute. Optionally sprinkle chopped cilantro before serving.
