Boil noodles 7 to 9 minutes, drain.
Preheat oven to 350 degrees.
In a large bowl, beat eggs, stir in ricotta cheese, 3 cups of mozzarella, and 3/4 cup of parmesan, parsley and a dash of pepper.
Spread 1 jar of sauce in the bottom of the baking dish.
Fill each cooked manicotti with ricotta mixture, and place in baking dish.
Top with second jar of sauce and remaining cheeses.
Cover with foil, and bake 45 minutes.
Uncover, and cook until cheese is melted (about 5 min).
