Preheat oven to 375.
Whisk orange juice, olive oil, cajun seasoning, thyme, Worcestershire sauce and Kosher salt in a large bowl.
Place a rack inside a baking sheet with sides lined with foil.
Poke holes in the sweet potatoes and place in the microwave, but don't turn it on yet.
Dip and flip each pork chop in the marinade, then place on the rack. KEEP THE MARINADE IN THE BOWL FOR LATER.
Bake for 15 minutes, then flip. Continue baking the pork chops for 10 minutes, but start the sweet potatoes now…
Turn on the microwave with the sweet potatoes for 25 minutes, until soft.
Pull out the baking sheet with pork chops, then preheat the broiler at 500.
Add the honey to the marinade and whisk again. Brush over one side of the pork chops, then place under the broiler for about 4 minutes (you can raise the rack).
Flip the pork chops and brush the marinade on the other side, return to oven. Start reducing the marinade in a skillet on medium-high heat. After about 4 more minutes the pork chops should be done..
Reduce the marinade a bit, but keep it a bit runny, about 5 minutes stirring with a spatula.
When the sweet potatoes are soft, slice them lengthwise down the middle and scoop the insides into a bowl. Mash with butter and salt to taste.
Drizzle some of the sauce over the pork chops and/or sweet potatoes before serving.
