====== Honey Glazed Pork Chops with Mashed Sweet Potatoes ====== ===== Info ===== ^Given By: | Bill | ^Preparation Time: | 1 hour | ^Serving Size: | 4 | ===== Ingredients ===== {{ :recipes:dsc04202.jpg?direct&400|}} **Marinade** * 4 to 6 bone-in center-cut pork chops * 1 cup freshly squeezed juice from oranges * 2 Tbsp olive oil * 4 tsp Cajun seasoning * 1 tsp dried Thyme * 2 tsp Worcestershire sauce * 1.5 tsp Kosher salt **Marinade (2nd part)** * 4 tsp honey **Sweet Potatoes** * 4 medium-sized sweet potatoes * 2 Tbsp butter * salt to taste ===== Instructions ===== - Preheat oven to 375. - Whisk orange juice, olive oil, cajun seasoning, thyme, Worcestershire sauce and Kosher salt in a large bowl. - Place a rack inside a baking sheet with sides lined with foil. - Poke holes in the sweet potatoes and place in the microwave, but don't turn it on yet. - Dip and flip each pork chop in the marinade, then place on the rack. KEEP THE MARINADE IN THE BOWL FOR LATER. - Bake for 15 minutes, then flip. Continue baking the pork chops for 10 minutes, but start the sweet potatoes now... - Turn on the microwave with the sweet potatoes for 25 minutes, until soft. - Pull out the baking sheet with pork chops, then preheat the broiler at 500. - Add the honey to the marinade and whisk again. Brush over one side of the pork chops, then place under the broiler for about 4 minutes (you can raise the rack). - Flip the pork chops and brush the marinade on the other side, return to oven. Start reducing the marinade in a skillet on medium-high heat. After about 4 more minutes the pork chops should be done.. - Reduce the marinade a bit, but keep it a bit runny, about 5 minutes stirring with a spatula. - When the sweet potatoes are soft, slice them lengthwise down the middle and scoop the insides into a bowl. Mash with butter and salt to taste. - Drizzle some of the sauce over the pork chops and/or sweet potatoes before serving. ===== Photos =====
