====== Cabbage-Potato Mash ====== ===== Info ===== ^Given By: | Food Network Magazine | ^Preparation Time: | 40 min | ^Serving Size: | 4 | ===== Ingredients ===== * 1 lb Yukon gold potatoes, peeled and quartered * 2 cups shredded cabbage * 4 Tbsp butter (2 for sautéing, 2 for mashing) * 4 scallions, sliced * 1/2 cup half-and-half * nutmeg ===== Instructions ===== Boil potatoes in salted water until tender. Reserve 1/4 cup of the cooking water when draining. Sauté shredded cabbage in butter for 2 minutes. Add the reserved cooking water, cover and cook for 3 minutes. Add potatoes, sliced scallions, half-and-half, 2 tablespoons butter and a pinch of nutmeg. Mash until smooth. Season with salt and pepper. ===== Photos =====
